Spices go hand in hand with Sri Lankan cuisine, adding fragrance, flavour & colour to everyday meals. In Sri Lanka no two meals taste the same since spices are added to food according to the individual preference of the cook. Sri Lankans add spices to fish, meat & vegetables, which are made as curries to accompany boiled rice. Often at special occasions cloves, cardamoms, saffron, cinnamon, curry leaves & rampe are tempered in a little oil & added to Rice in order to enhance its flavor & aroma.
The ordinary Singhalese curry contains up to thirteen herbs and spices: Chillies, coriander, cumin, curry leaves, fennel, fenugreek, garlic, ginger, lemon grass, lime, onion, and rampe and turmeric. “Thuna Paha” meaning “three-five” is a mixed curry powder that is used by Sri Lankans when preparing basic meals such as vegetable or meat curries. It is a mix of five spices that are 1st roasted & then powdered.Coriander, cardamom, cumin, cinnamon and fennel are popularly used to make this powder.
